SWEET AND SOUR CHICKEN

DIRECTIONS:

  1. Chop the CHICKEN BREAST fillets. Put the meat in a bowl and mix with the starch and the water. The meat should be mud-like: should not be too dry nor too wet (no water at the bottom of the bowl!). Add a little salt. Leave the meat in the starch for about 5-10 minutes.
  2. Mix two tablespoons of PLAIN FLOUR, three tablespoons of STARCH and ten tablespoons of WATER and add a little BAKING POWDER and OIL. Make a consistent paste.
  3. Mix the CHICKEN BREAST with the PASTE.
  4. Heat up enough OIL to cover the meat (~250°C). Add the CHICKEN BREAST and roast for a couple of minutes until the paste turns crispy-yellow. Take them out when they are ready. Clean the wok.
  5. Heat OIL to a mild temperature. Add the TOMATO SAUCE, 1,5 tablespoon of SUGAR, half tablespoon of VINEGAR, and a little WATER. Stir until it becomes smooth. Add a little SALT and a little dissolved STARCH.
  6. Mix the roasted CHICKEN BREAST and the SAUCE.
  7. IT IS READY TO BE SERVED!

TIPS:

  • The same dish can be prepared with pork.
  • It is possible to fry fruits in the paste. Add some honey when fried to have a tasty dessert.
